Bailey's Mint Chocolate Cupcakes

I had been making these cupcakes for the past 3 years for St Paddy's. I got the recipe from BakingBites. It's already perfect as it is, thus I never, and will never ever tinker with it. This is my St. Paddy's cupcake recipe, adapted from BakingBites.

I made these cupcakes specially for my friend Ife, who is part Irish and had been having a string of good luck this year, unlike last year when we first met. I truly believe I'm her lucky charm, LOL! She and I have been celebrating St. Paddy's for the past 2 weeks.. partying and drinking like it's gonna go out of style! Funny thing is, tonight, on the actual feast day, we went for Po Boys and had half of an Abita beer each at AJ's, since we do not want to deal with the St. Paddy's crowd. Even funnier, we are both home and in bed at 10 P.M., very sober.
