Market Find: Kumato Tomatoes

In my search for the firm tomato (Bill only eats firm tomatoes), I found these Belgian-engineered tomatoes. Not only is it sweeter than the regular tomato (due to higher fructose content), it also has a harder skin which means longer shelf life, which is important since I store tomatoes in the cupboard.

I decided to make caprese salad with it since the picture on the package label was very enticing.

Caprese Salad

4 Kumato Tomatoes, sliced
1/2 lb fresh mozzarella cheese, sliced
good extra virgin olive oil
good balsamic vinegar
12 pcs sweet basil leaves
sea salt and freshly ground pepper

Spread sliced tomatoes in a baking sheet. Brush one side with olive oil, sprinkle with salt and freshly ground pepper. Turn the tomatoes and brush the other side with the balsamic vinegar, then sprinkle with salt and pepper. Stack them in a serving plate, alternating it with the mozzarella cheese slices. Top with julienned basil and serve.
