Craving. Shrimp. Quesadilla. I know I still have some Gulf shrimp in my freezer that I got from Charleston, but what to make them with? Off I go to the market, where I found these gorgeous organic Pennsylvania Shiitake Mushrooms and Soft Ripened German Cheese with Mushrooms.
Saute shrimp and mushrooms with a little olive oil

Spread the cheese, shrimp and mushrooms on a tortilla Press another tortilla on top |
In a pan, toast both sides of the quesadilla until cheese melts. Twist tortilla while cooking to prevent it from burning. |
Cut into wedges and enjoy! |
Now for dessert, banana-nutella quesadilla--
